Ingredients
- 1 cup uncooked orzo pasta
- 2 tablespoons olive oil
- 2 cloves garlic
- ¼ teaspoon crushed red pepper
- 2 boneless skinless chicken breast, cut into bite size pieces
- salt to taste
- 1 tablespoons fresh parsley, chopped
- 2 cups fresh spinach
- grated Parmesan cheese, for topping
Directions
Cook orzo until al dente, drain. Heat oil over medium high heat, cook garlic and pepper one mnute. Stir in chicken, salt, and cook 2-5 minutes. Reduce heat to medium add parsley and orzo. Add spinach and continue to cook until wilted. Top with Parmesan cheese. |
