Ingredients

  • 1 cup uncooked orzo pasta
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • ¼ teaspoon crushed red pepper
  • 2 boneless skinless chicken breast, cut into bite size pieces
  • salt to taste
  • 1 tablespoons fresh parsley, chopped
  • 2 cups fresh spinach
  • grated Parmesan cheese, for topping

Directions

Cook orzo until al dente, drain.
Heat oil over medium high heat, cook garlic and pepper one mnute. Stir in chicken, salt, and cook 2-5 minutes. Reduce heat to medium add parsley and orzo. Add spinach and continue to cook until wilted. Top with Parmesan cheese.
