Ingredients

  • 4 boneless skinless chicken breast, cut to bite size
  • curry powder and salt to taste
  • 3 tablespoons oil
  • 2 tablespoons butter
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 1 tablespoon cumin
  • 1 teaspoon salt
  • 1 teaspoon ginger
  • 1 tablespoon cayenne pepper, or less
  • ½ teaspoon cinnamon
  • ¼ teaspoon tumeric
  • 14 ounces tomato sauce
  • 1 cup heavy cream
  • 2 teaspoons paprika
  • 1 teaspoon sugar

Directions

Sprinkle chicken with salt and curry powder and set aside.
Melt butter and saute onion, add garlic, cumin, salt, ginger, cayenne, cinnamon and tumeric for another minute. Add tomato sauce and boil. Simmer for 5 minutes. Add cream, paprika and sugar. Simmer.
Heat oil and sear the chicken on all sides. Transfer chicken and any juices to tomato sauce and simmer until chicken is cooked through. Serve over rice.
