Ingredients
- 1 cup graham cracker crumbs
- ½ cup chopped pecans, finely chopped
- 3 tablespoons sugar
- ½ teaspoon cinnamon
- ¼ cup unsalted butter
- 16 ounces cream cheese
- ½ cup sugar
- 2 eggs
- ½ teaspoon vanilla
- 4 cups apples, peeled and sliced
- ⅓ cup sugar
- ½ teaspoon cinnamon
- ¼ cup chopped pecans
Directions
Mix together the first five ingredients (through the butter). Press into the bottom of a 9 inch springform pan. Bake at 350° for 10 minutes. In a large bowl, beat cream cheese and 1/2 cup sugar. Beat in the eggs one at a time. Blend in vanilla; pour filling onto crust. In a small bowl, stir together 1/3 cup sugar and 1/2 teaspoon cinnamon. Toss with the apple slices. Spoon over cream cheese mixture. Sprinkle with 1/4 cup pecans. Bake for 60-70 minutes. With a knife, loosen cake from rim of pan. Let cool. Chill before serving. Can serve with cinnamon ice cream. |
