Ingredients

  • 1 egg
  • 1 ¼ cups buttermilk
  • 2 tablespoons cooking oil
  • 1 cup flour
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt

Directions

1. In small bowl beat egg with fork. Beat in buttermilk and oil. Set aside. In large mixing bowl, stir together flour, sugar, baking powder, soda, and salt. Add egg mixture to flour mixture and stir until blended but still slightly lumpy.
2. Lightly grease a griddle and heat over medium high heat. Pour approximately 1/4 cup of batter per pancake and cook until it becomes bubbly. Flip and finish cooking.
