Ingredients

  • 4 russet potatoes
  • 2 cups cooked, chopped chicken
  • ½ cup Frank's Wing Sauce
  • 2 tablespoons butter, melted
  • salt and ground black pepper to taste
  • ¼ cup blue cheese
  • ¼ cup cheddar cheese
  • 2 green onions, sliced

Directions

Wash potatoes and prick with a fork. Bake at 400° for an hour or until tender.
After cooled, slice them in half and scoop out the middle.
Brush the skins all over with oil and bake at 450° for 5 minutes on each side.
Mix together the chicken, butter and wing sauce.
Season skins with salt and pepper. Fill with chicken mixture. Top with shredded cheeses. Broil until cheese is melted. Top with onions.
