Ingredients

  • 6 quarts cucumbers
  • 1 quart cider vinegar
  • 4 cups sugar
  • ¾ cup salt
  • 2 tablespoons celery seed
  • 2 tablespoons mustard seed
  • 6-12 chili peppers, bottom tips removed

Directions

Wash cucumbers, slice thin. Peel and slice onions thin. Arrange cucumbers and onions in layers, sprinkling with salt between layers. Cover and let sit three hours. Drain, combine remaining ingredients, bring to boil to dissolve sugar-approximately 5 minutes. Add cucumber mixture and bring to boiling point but DO NOT BOIL. Seal in clean jars. If you add the chili peppers, cut the bottom tips off of the peppers and 1-2 in each jar.
