Ingredients

  • ¼ cup red wine vinegar
  • 2 tablespoons vegetable oil
  • ½ teaspoon chili powder
  • ¼ teaspoon cumin
  • 1 small clove garlic-finely chopped
  • 1 cup frozen corn-thawed and drained
  • 1 cup diced jicama
  • ¾ cup tomato-seeded and chopped
  • 2 tablespoons green onions-sliced
  • 2 cans 15-oz each-black beans, drained and rinsed

Directions

In small bowl, combine first five ingredients. In large bowl add remaining and pour over dressing.
