Ingredients

  • 2 tablespoons olive oil
  • 1 cup large onion , diced
  • 1 green pepper, seeded and diced
  • 2 large plum tomatoes, seeded and chopped
  • 4 garlic cloves, minced
  • 1.5 teaspoons oregano
  • 1.5 teaspoons cumin
  • 1 dried bay leaf
  • 3 cans can black beans, rinsed and drained
  • 5 cups reduced sodium chicken broth
  • 1 cup frozen corn
  • 1 cup smoked ham, diced-8 oz
  • ¼ cup fresh cilanatro, chopped
  • 1 teaspoon tabasco
  • sour cream
  • cilantro
  • lime wedges

Directions

Heat oil in large soup pot, add onion, bell pepper, and tomatoes. Saute 10 minutes. Stir in garlic, oregano, cumin, and bay leaf, then add beans, cook 2 minutes, stirring constantly. Add stock, bring to boil, reduce to simmer, cover and cook 20 minutes. Using a stick blender, puree half of the mixture. Stir in corn, ham, cilantro. and Tabasco. Cook over medium heat 4 minutes longer. Garnish with sour cream, cilantro, and lime.
