Ingredients
- 2 tablespoons olive oil
- 1 cup large onion , diced
- 1 green pepper, seeded and diced
- 2 large plum tomatoes, seeded and chopped
- 4 garlic cloves, minced
- 1.5 teaspoons oregano
- 1.5 teaspoons cumin
- 1 dried bay leaf
- 3 cans can black beans, rinsed and drained
- 5 cups reduced sodium chicken broth
- 1 cup frozen corn
- 1 cup smoked ham, diced-8 oz
- ¼ cup fresh cilanatro, chopped
- 1 teaspoon tabasco

Directions
Heat oil in large soup pot, add onion, bell pepper, and tomatoes. Saute 10 minutes. Stir in garlic, oregano, cumin, and bay leaf, then add beans, cook 2 minutes, stirring constantly. Add stock, bring to boil, reduce to simmer, cover and cook 20 minutes. Using a stick blender, puree half of the mixture. Stir in corn, ham, cilantro. and Tabasco. Cook over medium heat 4 minutes longer. Garnish with sour cream, cilantro, and lime. |
