Ingredients

  • 2 cups dry northern beans
  • ½ pound bacon
  • 1 onion, finely chopped
  • 3 tablespoons molasses
  • 2 teaspoons salt
  • ¼ teaspoon pepper
  • ½ cup ketchup
  • 1 tablespoon worcestershire sauce
  • ¼ cup brown sugar
  • ¼ teaspoon dry mustard
  • water from cooked beans

Directions

1. Preheat oven to 325°. Cook beans according to basic directions. (The beans will remain a bit hard because they are not fully done) Save the cooking water from the beans. In a saucepan combine the molasses, salt, pepper, mustard, ketchup, W sauce and brown sugar. Boil for 30 seconds.
2. In a baking dish, layer half the beans, onion and 1/2 the coarsely chopped bacon. Top with the remaining beans and bacon. Pour over the molasses mixture and gently stir. Bake at 325° for 1 1/2-2 hours. Uncover and add some bean water. Bake for 1 1/2-2hours.
