Ingredients

  • 2 ¼ cups flour
  • 1 teaspoon salt
  • ½ teaspoon baking soda
  • ½ cup sugar
  • ½ cup oil
  • 2 eggs
  • cup applesauce
  • ¼ cup buttermilk
  • 2 tablespoons grated fresh ginger
  • ¾ cup golden raisins
  • ½ cup powdered sugar
  • 1 tablespoon cream cheese
  • 1 tablespoon lemon juice
  • ½ teaspoon lemon zest
  • teaspoon salt

Directions

Preheat oven to 325°. Spray a glass loaf pan with cooking spray. Whisk together flour, salt and soda. Make a well in the center. In another bowl, combine sugar, oil, egg and whisk until color has lightened. Add applesauce, buttermilk and ginger. Stir to combine. Pour wet mixture into well and stir only until moistened. Fold in raisins. Pour into prepared pan and bake approximately one hour. Cool on rack for 10 minutes, remove from pan and continue to cool for 3 hours. Whisk the other ingredients together and drizzle over bread.
