Ingredients

  • 1.5 cups Cake Flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon powdered ginger
  • ½ teaspoons ground cloves
  • ¼ teaspoon salt
  • 2 large eggs
  • ¾ cup brown sugar
  • ½ cup oil
  • 2 cups grated zucchini
  • ½ cup raisins, optional

Directions

Grease and flour muffin tins. Whisk dry ingredients together. In mixing bowl combine sugar, oil and eggs. Beat for 2-3 minutes. Add zucchini just until smooth. Add dry ingredients and mix until blended. Add raisins. Fill 3/4 full in the muffin tin. Bake at 350° for 20-25 minutes.
