Ingredients

  • ½ cup flour
  • ½ cup cornmeal
  • 1 teaspoon salt
  • teaspoon pepper
  • ½ cup butter
  • ½ cup oil
  • 1 pound fillets
  • more flour
  • eggs

Directions

Heat butter and oil in large skillet until hot. Rinse fillets; pat dry. Sprinkle lightly wih flour. Dip in beaten egg and then in coating. Fry over medium heat and brown on both sides. 6-8 minutes total.
