Ingredients

  • ¾ cup butter
  • ½ cup + 1 T flour
  • 3 cups milk
  • ¾ teaspoon salt
  • ¾ teaspoon pepper
  • 1 pound ground beef
  • 1 tablespoon chili powder
  • 1 clove garlic-minced
  • ½ teaspoon salt
  • ½ cup onion-chopped
  • 3 cups white sauce
  • ½ teaspoon ground sage
  • ½ teaspoon oregano
  • ½ teaspoon cumin
  • 2 tablespoons chopped green chilies, canned
  • 2 cups cheddar cheese-grated
  • 1 bag shredded lettuce
  • 12 white flour tortillas shells

Directions

1. To make white sauce: melt butter in pan, remove from heat, add flour and spice. Slowly add milk, mixing until smooth. Put back on stove at medium heat, stirring constantly until thick.
2. Brown ground beef, drain. Add chili powder, garlic, salt and onion. Combine whie sauce sage, oregano, cumin and chilies. Reserve one cup of white sauce and combine that with one cup of cheese. Set aside. Add remaining spiced white sauce to pan with meat and heat through. In each shell, put down lettuce, top with meat mixture and roll up. Place in baking pan, seam down. Top with remaining sauce and remaining cheese. Bake at 350° for 15 minutes, covered with foil. Uncover and broil top if desired a crispy top.
