Ingredients

  • 1 pound chicken breast-boneless and skinless
  • 1 egg white
  • ½ teaspoon salt
  • 2 teaspoons cornstarch
  • 10 ounces pineapple chucks packed in juice
  • ¼ cup pineapple juice from 10 oz can
  • ¼ cup vinegar
  • ¼ cup ketchup
  • ¼ teaspoon salt
  • 2-3 tablespoons brown sugar
  • 1 tablespoon oil
  • 1 teaspoon oil
  • fresh ginger root
  • 1 red pepper chopped
  • 1 small onion chopped

Directions

Heat wok very hot, add 1 tablespoon oil, swirl around, add chicken. Cook one minute and toss chicken and cook another minute. Remove chicken, add 1 teaspoon oil over medium high heat, add onion, pepper and ginger for one minute. Mix remaining ingredients and whisk together with the exception of the pineapple chunks. Add that mixture and pineapple to wok. Simmer for 2 minutes. Add chicken and simmer 5 minutes.
