Ingredients

  • 1 stick of butter
  • 8 tablespoons flour
  • 1/2 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 2 cups milk
  • salt and pepper to taste
  • nutmeg, pinch
  • 3 tablespoons butter
  • 24 ounces fresh spinach

Directions

Melt butter, whisk flour until golden brown. Add onion and garlic. Whisk in milk, stirring constantly for 5 minutes. Season with salt and pepper.
In separate pan, melt 3 T butter, add spinach, cook until wilted. Add spinach to sauce.
