Ingredients

  • 3 pounds beef short ribs, trimmed and seasoned with salt and pepper
  • 1 tablespoon oil
  • ½ cup chopped scallions
  • ¼ cup minced fresh ginger
  • ¼ cup brown sugar
  • ¼ cup rice wine vinegar
  • ¼ cup Sriraha sauce
  • ¼ cup molasses
  • ¼ cup hoisin sauce
  • ¼ cup fresh lime juice
  • 1 teaspoon fennel seeds
  • ¼ teaspoon red pepper flakes

Directions

1. Brown ribs in oil in a large saute pan over medium-high heat about 10 minutes. Work in batches if necessary.
2. Transfer the browned ribs to a 4-6 quart slow cooker.
3. Combine remaining ingredients. Pour over the ribs.
4. Cover the slow cooker and cook until tender, on high 4-6 hours or on low 7-9 hours.
