Ingredients
- 2.5 cups pinto beans (dried)
- 3 quarts water
- 2 tablespoons lard
- ¼ cup water
- ¾ cup shredded cheddar cheese
- ½ cup finely chopped onion
- salt and pepper, to taste
Directions
1. Rinse beans. put beans in 3 quarts of water in pressure cooker. bring up to hiss. turn heat down to medium high for 30 minutes. let cool until cooker can be opened. drain beans. |
2. in heavy skillet, add lard. saute onions. add beans a batch at a time and 1/4 cup of water. cook over medium heat while mashing with potato masher. add remaining beans. mash as necessary. add cheese and mix well. |
