Ingredients

  • 2.5 cups pinto beans (dried)
  • 3 quarts water
  • 2 tablespoons lard
  • ¼ cup water
  • ¾ cup shredded cheddar cheese
  • ½ cup finely chopped onion
  • salt and pepper, to taste

Directions

1. Rinse beans. put beans in 3 quarts of water in pressure cooker. bring up to hiss. turn heat down to medium high for 30 minutes. let cool until cooker can be opened. drain beans.
2. in heavy skillet, add lard. saute onions. add beans a batch at a time and 1/4 cup of water. cook over medium heat while mashing with potato masher. add remaining beans. mash as necessary. add cheese and mix well.
