- 8 ounces wonton wrappers
- 1 inch piece of ginger
- 2 garlic cloves
- 1-2 serrano chile
- 3 scallions
- 2 limes
- 2 tablespoons peanut oil
- 1 pound lean ground pork
- ¼ cup low-sodium soy sauce
- 2 tablespoons rice vinegar
- ½ teaspoon sugar
- 1 teaspoon cornstarch
Directions
Cut wrappers into 3 equal pieces. Should look like wide noodles. Mince garlic and ginger. Cut peppers into small slices, scallions thin slices. Wedge the limes. Heat oil, add ginger and garlic. Stir one minute. Add pork and break it up, about 5 minutes. Mix together soy, vinegar, sugar and cornstarch. Add sauce to pork. Add pepper and scallions, reduce to medium low heat. Drop wonton pieces into boiling water. Boil 1-2 minutes and remove with slotted spoon when they float and add to pork mixture. Toss together and serve with lime wedges. |
