Ingredients

  • ½ cup Olive oil
  • cup soy sauce
  • ¼ cup red wine vinegar
  • juice of one lemon
  • 1-2 tablespoon Worcestershire sauce
  • 1-2 tablespoon fresh parsley, finely chopped
  • 2 teaspoons dry mustard
  • freshly ground black pepper, to taste
  • 4 garlic cloves, minced
  • 1 pound pork tenderloin
  • ½ cup chicken broth
  • 2-3 tablespoon pork marinade-mix thoroughly
  • 1-2 teaspoon butter

Directions

Combine all ingredients for marinade. Place pork in zip bag and add marinade for at least 3-4 hours.
In hot skillet, sear tenderloin on each side. Place in oven at 350° until the temp is 160° approximately 30-40 minutes. Let rest 5 minutes.
In skillet, add broth over medium heat and scape up all the brown pieces. Add marinade and let it boil down for 2-3 minutes. Add butter and remove from heat, stirring to incorporate the butter. Pour over meat.
