Ingredients
- 1 pound pork tenderloin , cut into 24 cubes
- ½ cup fresh lemon juice
- ¼ cup olive oil
- ¼ cup fresh parsley, chopped
- ¼ cup fresh mint, chopped
- 2 garlic cloves, minced
- 1 teaspoon kosher or regular table salt
- 1 teaspoon black pepper
- 24 cherry tomatoes
- red onion, cut into 1 in pieces
- pita bread brushed with oil and salt/pepper
- 1 cup Greek style yogurt
- ¼ cup fresh parsley, chopped
- ¼ cup fresh mint, chopped
- 1 tablespoon minced lemon zest
- 1 tablespoon olive oil
- 1 teaspoon honey
Directions
Combine the marinade ingredients. Add pork and refrigerate 3 hours or over night. Skewer to pork, onion, tomato etc. Grill 8-10 minutes. Grill the pita. Combine all the sauce ingredients, add salt and pepper. |
