Ingredients

  • 1 pound pork tenderloin , cut into 24 cubes
  • ½ cup fresh lemon juice
  • ¼ cup olive oil
  • ¼ cup fresh parsley, chopped
  • ¼ cup fresh mint, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon kosher or regular table salt
  • 1 teaspoon black pepper
  • 24 cherry tomatoes
  • red onion, cut into 1 in pieces
  • pita bread brushed with oil and salt/pepper
  • 1 cup Greek style yogurt
  • ¼ cup fresh parsley, chopped
  • ¼ cup fresh mint, chopped
  • 1 tablespoon minced lemon zest
  • 1 tablespoon olive oil
  • 1 teaspoon honey

Directions

Combine the marinade ingredients. Add pork and refrigerate 3 hours or over night. Skewer to pork, onion, tomato etc. Grill 8-10 minutes. Grill the pita. Combine all the sauce ingredients, add salt and pepper.
