Ingredients

  • 1 ¼ cups flour
  • 2 tablespoons sugar
  • ¼ teaspoon salt
  • 4 tablespoons unsalted butter
  • 4 tablespoons cream cheese-cubed/cold
  • 2 tablespoons shortening-cubed
  • 3 tablespoons iced water

Directions

Preheat oven to 400°. In processor-pulse together flour, sugar and salt. Add butter, shortening and cream cheese, pulse until coarse. Add slowly the ice water until mixture forms a ball. Chill for one hour up to 3 days. Roll on a slightly floured area. Put crust into a 9 inch pie plate that has been sprayed lightly with cooking spray. Line crust with foil, overhanging the edges of the crust. Fill crust with dried beans or rice. Bake for 18-20 minutes on lowest oven rack. Remove from oven and remove foil and beans from crust. Discard both. Return to oven for another 5 minutes. Cool completely before filling crust.
