Ingredients
- 16 ounces penne pasta
- 2 14.5 oz canned chopped tomatoes, drained
- 1 cup mozzarella, cubed
- 1 small cucumber , peeled, seeded, chopped
- ½ green pepper, finely chopped
- 3-4 green onions, finely chopped
- ¾ cup extra-virgin olive oil
- 1 tablespoon garlc, minced
- 1 teaspoon crushed red pepper
- ½ teaspoon black pepper
- ½ teaspoon salt
Directions
Cook pasta al dente, drain and cool. Combine pasta, tomatoes, cheese, cucumber, green pepper and green onions, mixing well. Whisk together dressing ingredients until well incorporated. Pour over salad and chill one hour. |
