Ingredients
- 12 ounces can coconut milk
- 1 onion, thinly sliced
- 2 limes-zest and juice
- 2 tablespoons grated fresh ginger
- 1 teaspoon soy sauce
- 5 pounds mussels-cleaned and debearded
- 1 cup minced fresh cilantro
- 1 bunch green onions, thinly sliced
Directions
Put milk, onion, lime zest and juice, ginger, and soy sauce in a large pan with a tight fitting lid. Bring to boil over medium-high heat. Reduce to a simmer for about 5 minutes. Toss mussels into the pot. Cover and steam for about 10 minutes. Discard any unopened mussels. Transfer to a serving bowl and cover with sauce and remaining ingredients. |
