Ingredients

  • 1 cup pastina pasta, or any small pasta
  • 2 tablespoons olive oil
  • ½ cup cubed chicken breast
  • ½ cup diced onion
  • 1 clove garlic-minced
  • 14.5 ounces can diced tomatoes, with juice
  • 1 cup shredded mozzarella
  • ¼ cup chopped fresh flat-leaf parsley
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ cup bread crumbs
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon butter

Directions

1. Preheat oven to 400°.
2. Bring a medium pot of water to boil over high heat. Add pasta and cook until tender, approximately 5 minutes. Drain pasta into large mixing bowl.
3. In saute pan, add olive oil over medium heat. Add the chicken and cook 3 minutes. Add the onion and garlic and cook 5 minutes, stirring occasionally. Add the chicken mixture to the pasta. Add the tomatoes, mozzarella cheese, parsley, salt and pepper. Stir to combine. Place the mixture in an 8x8 baking dish that have been buttered. In a small bowl, mix together the bread crumbs and Parmesan cheese. Sprinkle over the top of the pasta mixture. Dot the top with small bits of butter. Bake until the top is golden brown, approximately 30 minutes.
