Ingredients

  • 1/2 of a large onion
  • 1 pound ground lamb
  • 1 pound ground beef
  • 1 tablespoon minced garlic
  • 1 teaspoon oregano
  • 1 teaspoon cumin
  • 1 teaspoon marjaram
  • 1 teaspoon ground Rosemary
  • 1 teaspoon thyme
  • 1 teaspoon pepper
  • ¼ teaspoon sea salt

Directions

Process onion into a liquid. Put in a dish towel and squeeze out all the liquid. Combine everything else and the onion. Refrigerate 2 hours to blend flavors. In processor, process the mixture and press into a loaf pan and do not leave any air bubbles. In a large roaster, put down a damp kitchen towel. Add loaf pan and fill half way up the loaf pan with boiling water. Bake at 325° for 45-60 minutes or until the internal temperature is 165°. Let rest 15 minutes. Remove and slice.
