Ingredients
- 1 cup dry couscous
- 1 ¼ cup chicken broth
- 2 tablespoons lime juice
- 1 teaspoon red wine vinegar
- ½ teaspoon cumin
- 8 green onions, chopped
- 1 red pepper, chopped
- ¼ cup cilantro, chopped
- 1 cup frozen corn-thawed and drained
- 30 ounces black beans, rinsed and drained
- salt and pepper to taste
Directions
Boil broth, add couscous, cover and let set for 5 minutes. Put in bowl and fluff with fork. Mix all ingredients together once the couscous is cooled. |
