Ingredients

  • 1 cup dry couscous
  • 1 ¼ cup chicken broth
  • 2 tablespoons lime juice
  • 1 teaspoon red wine vinegar
  • ½ teaspoon cumin
  • 8 green onions, chopped
  • 1 red pepper, chopped
  • ¼ cup cilantro, chopped
  • 1 cup frozen corn-thawed and drained
  • 30 ounces black beans, rinsed and drained
  • salt and pepper to taste

Directions

Boil broth, add couscous, cover and let set for 5 minutes. Put in bowl and fluff with fork. Mix all ingredients together once the couscous is cooled.
