Ingredients

  • 8 ounces whole wheat pasta
  • ½ cup low fat evaporated milk
  • ¼ cup freshly grated Parmesan
  • 1 egg yolk
  • 2 teaspoons salt free cajun seasoning
  • 16 ounces chicken breast chopped
  • ¼ cup pasta water
  • 1 teaspoon oil
  • ½ cup diced onion
  • 1 red pepper, chopped
  • 2 cloves garlic-minced
  • 1 cup frozen peas
  • 2 cups sliced mushrooms

Directions

Cook pasta and reserve 1/4 cup pasta water. Whisk together milk, cheese and yolk. Set aside. Mix seasoning and chicken. Saute in non-stick pan until chicken is cooked. Use cooking spray if needed. Remove chicken from pan, add oil and saute mushrooms, onion, red pepper for 5 minutes. Add garlic and saute for another minute. Add the chicken and pasta water and cook until the water is reduced. Add the milk mixture and peas. Heat through. Top with sliced green onions and grated Parmesan Cheese if desired.
