Ingredients

  • 2 boneless skinless chicken breast
  • salt and ground black pepper to taste
  • 4 teaspoons Pesto
  • 1 tomato , thinly sliced
  • ¼ cup shredded mozzarella , approx.
  • 2 teaspoons Parmesan Cheese

Directions

Slice chicken in half to form 4 pieces. Line a baking sheet with foil. Place the chicken on the sheet. Spread with pesto. Bake at 400° for 15 minutes. Top with tomato slices, mozzarella cheese, and then Parmesan cheese. Bake additional 5 minutes.
