Ingredients

  • ½ cup black rice
  • ½ white onion-diced
  • 1 clove garlic-grated
  • 1 tablespoon EVOO
  • 1 cup chicken broth
  • ½ cup shelled edamame
  • ½ teaspoon sesame oil
  • 1 teaspoon soy sauce

Directions

In a saucepan, saute the onion in the EVOO until tender. Add garlic, continue to saute for one minute. Add rice and saute for one minute. Add broth, bring to a boil, cover and simmer for 25 minutes. Add edamame and continue to simmer, covered for 5-10 minutes or until the liquid is absorbed. In a small bowl, combine the sesame oil and soy sauce and add to the rice.
