Ingredients

  • 4 beets-cooked and sliced
  • 3 Tablespoon Maple syrup
  • 10 ounces mixed baby greens
  • ½ cup frozen orange juice, concentrate
  • ¼ cup balsamic vinegar
  • ½ cup extra-virgin olive oil
  • 2 ounces goat cheese
  • ½ cup chopped walnuts

Directions

In skillet, toast walnuts over medium low heat. When toasted, add the maple syrup. Stir until coated and cool. Evenly divide the greens between 4 plates, top with walnuts and beet slices. Mix together the concentrate, oil and vinegar and pour over salads. Top with goat cheese.
