Ingredients
- 4 beets-cooked and sliced
- 3 Tablespoon Maple syrup
- 10 ounces mixed baby greens
- ½ cup frozen orange juice, concentrate
- ¼ cup balsamic vinegar
- ½ cup extra-virgin olive oil
- 2 ounces goat cheese
- ½ cup chopped walnuts
Directions
In skillet, toast walnuts over medium low heat. When toasted, add the maple syrup. Stir until coated and cool. Evenly divide the greens between 4 plates, top with walnuts and beet slices. Mix together the concentrate, oil and vinegar and pour over salads. Top with goat cheese. |
