Ingredients

  • ¼ cup Balsamic vinegar
  • 3 Tablespoon shallots-thinly sliced
  • ` tablespoon honey
  • cup Extra virgin olive oil
  • salt and ground black pepper to taste
  • 6 beets roasted and sliced
  • 6 cups arugula
  • ½ cup chopped walnuts , toasted
  • ½ avocado-cubed
  • 3 ounces fresh soft goat cheese

Directions

Combine all ingredients for the dressing, adding at the end the oil. Combine all ingredients and top with dressing.
