Ingredients
- 3 pounds sirloin steak
- oil for browning meat
- 3 cups Burgundy wine
- 2 cups beef broth
- 2 tablespoons tomato paste
- 3 cloves garlic-minced
- ½ teaspoon thyme
- 1 bay leaf
- salt to taste
- 1 pound mushrooms-sliced
- 3 onions-chopped
- roux made with 1/2c butter/1/2c flour
Directions
Cut meat into bite size pieces. Season lightly with salt, pepper and flour. Brown in skillet in the oil. Do it in batches if needed. Saute mushrooms and onions in butter-approximately 1/2 of stick. In casserole place browned meat, wine, broth paste, garlic, thyme, bay leaf and seasoning. Bake at 350°, covered for approximately 2-3 hours. Add mushroom mixture and continue cooking for 1/2 hour. For the roux-melt the butters in small skillet, stirring constantly, add flour. Whisk into beef mixture until thickened. Serve over noodles. |
